摘要 PURPOSE: A method for producing red pepper paste and the red pepper paste manufactured thereby are provided to manufacture the red pepper paste containing a large amount of low molecular oligosaccharide and GABA Components. CONSTITUTION: A method for producing red pepper paste includes the following steps: manufacturing garlic gruel by steaming crushed garlic with Laminaria japonica fermentation extract in water at 90~100 °C for 4 ~ 5 hours; cooling and sugaring the garlic gruel with red pepper powder, fermented soybeans powder, and glutinous rice; aging the cooled materials after adding salt; managing the quality of the red pepper paste by radiating ultraviolet rays at a constant time during an aging period.
