摘要 FIELD: chemistry. ^ SUBSTANCE: invention relates to beer brewing technology. The method involves mixing coriander and hop, extraction of the obtained mixture with liquid nitrogen and separation of the corresponding miscella. Girasol is cut and dried in a microwave field at given process parametres and roasted. The girasol is mixed with malt, the obtained mixture is saturated with the separated miscella and pressure is simultaneously increased. Pressure is decreased to atmospheric pressure level with simultaneous freezing of the mixture and cryogenic grinding in a medium of released nitrogen. Sugar is added, water is poured and the mixture is saccharified to obtain wort. Brewing yeast is then added to the wort. Primary fermentation, fortification, after-fermentation and filtration are carried out. ^ EFFECT: invention shortens duration of the process and increases foam stability of the end product.
