PURPOSE: Herb mayonnaise and a preparation method thereof are provided to promote the herb consumption to increase the income of a farmhouse. CONSTITUTION: A method for preparing herb mayonnaise comprises the following steps of: preparing dried herbs of rosemary, peppermint, lemon balm, panel, oregano, and basil, and egg yolk, cooking oil, salt, vinegar, sugar, and water; mixing the 1kg herb selected among rosemary, peppermint, lemon balm, panel, oregano, and basil and 20?“ water; boiling the mixture for 1 hour to obtain a herb extract; placing the egg yolk in a mixer and beating the egg yolk; adding the 600ml vinegar, 120g salt, 150g sugar, and 300ml herb extract into the 1.0kg beaten egg yolk; stirring the mixture uniformly; and gradually adding 7.5?“ cooking oil to the mixture and emulsifying them. |
