PURPOSE: A method of preserving vegetables with a super-saturated sea salt solution and a method of purifying recycled sea salt using an aqueous ethanol solution are provided to ensure safety about germ, mold, yeast etc of vegetables after slating the vegetables in the super-saturated sea salt solution. CONSTITUTION: A method of preserving vegetables with a super-saturated sea salt solution includes a step for salting the vegetables in the super-saturated sea salt solution more than solubility. The vegetables are washed with an ethanol water solution of 70-75 volume percent with salt.
