PURPOSE: A method of making germinated 50% polished rice is provided to improve cooking property of the rice which is the softer than 70 % polished rice when the rice is cooked, and to maintain nutrients of brown rice and germinated brown rice. CONSTITUTION: A method of making germinated 50% polished rice includes the following steps: polishing brown rice by pounding to make 50 % polished rice after separating rice husks from rice seeds; making clean water by ozone sterilizing purified water after staying underground water, underground water in a rock mass or tap water in a storage tank; sterilizing germination-promoting materials and functional materials in the clean water with UV ultraviolet rays; dipping the polished rice in a settling tank of 32 °C±2 for 6 ~ 8 hours; spraying hot water on the rice every two hours while storing the rice on a wicker tray in a germination room of 35 °C~38 °C for 10 ~ 15 hours; manufacturing the 50 % polished rice by fermenting the rice stored in the germination room; dipping, rewashing, and dehydrating the germinated 50% polished rice; and drying the rice to a moisture content of 10 ~ 16 %.
