<P>PROBLEM TO BE SOLVED: To provide a method and an apparatus for producing foam-containing confectionery infiltrated with pervious food material, which can make the quality of the confectionery high and equivalent to that of the conventional one and, at the same time, the production efficiency of the confectionery higher than that of the conventional one. Ž<P>SOLUTION: In a method and an apparatus for producing confectionery of rice confectionery material 2 infiltrated with pervious food material, first, while only rice confectionery material 2 is being degassed under the reduced pressure P1 (0.05 Mpa<P1≤0.1013 Mpa), the degassed rice confectionery material is immersed in the liquid pervious food material and then the rice confectionery material is infiltrated with the pervious food material by injecting air, N<SB>2</SB>, CO<SB>2</SB>or the mixture of any of these gases into the vacuum permeation apparatus 5 for making the pressure condition P2 (0.1 Mpa<P2≤0.5 Mpa).
