FIELD: food industry. ^ SUBSTANCE: invention is intended for use in food industry to produce coffee substitutes. Method provides for preparation of recipe components, yacon cutting, drying in microwave field at specified parametres of process and frying, rosehips, apples and pears drying in microwave field at specified parametres of process and additional convective drying, frying of barley grain, mixing of specified components and cryo-grinding of produced mix in liquid nitrogen. ^ EFFECT: invention provides for production of new coffee drink from non-traditional raw materials according to wasteless technology. |
