PURPOSE: A method for manufacturing cherry wine by enzyme treatment is provided to distribute in change of wine market by supplying novel type of wine. CONSTITUTION: A method for manufacturing cherry wine by enzyme treatment comprises: a step of selecting cherry among Napoleon, Sunrise, or Zavre; a step of culturing Saccharomyces cereviseae at 37°C and adding sugar; a step of inputting yeast and culturing; a step of maintaining at 20°C by maximum alcohol concentration; a step of filtering and fermenting at 12°C; and a step of adding Leuconostoc oenos.
