<P>PROBLEM TO BE SOLVED: To provide a method for producing a flavor composition utilizing a heating reaction between methionine and a saccharide, enabling methional to be included in higher concentrations, and to provide a food or the like containing the composition thus produced. <P>SOLUTION: The method for producing the flavor composition includes the following processes: methionine and a saccharide are mixed together; the resultant mixture is heated for a specific time and at a specific temperature under a two-stage pH condition, wherein at least one of sodium chloride, potassium chloride, calcium chloride and a phosphate salt is (are) included; and the resultant mixture is heated under a specific pH condition, for a specific time and at a specific temperature. <P>COPYRIGHT: (C)2010,JPO&INPIT |
