PURPOSE: A manufacturing method of white Kimchi using wax gourd and white Kimchi using the same are provided to improve flavor of kimchi by properly aging wax gourd flesh with a high moisture content and mixing Chinese cabbage with seasoning. CONSTITUTION: A manufacturing method of white Kimchi using wax gourd includes the following steps: washing wax gourd; separating flesh of wax gourd from the wax gourd; mixing the skins with the flesh; and mixing the flesh and the skins with prepared seasoning. The extract includes adzuki bean extract, Coptis chinensis extract and wax gourd extract. |
