PURPOSE: A manufacturing method of cheese gruel using cheese stock compositions is provided to remarkably increase nutrients and taste of ordinary cheese gruel, and to reduce manufacturing processes of the cheese gruel. CONSTITUTION: A manufacturing method of cheese gruel using cheese stock compositions includes the following steps: manufacturing cheese stock 1 by heating and mixing thick stock 6~10 parts by weight, beef extract 3~5 parts by weight, garlic extract 0.5~2 parts by weight, manila clam extract 0.1~1 parts by weight, polysorbate 80 0.01~0.1 parts by weight, oleoresin paprika 0.01~0.05 parts by weight, whey powder 4~6 parts by weight, cheese powder 1~3 parts by weight, sodium caseinate 0.5~2 parts by weight and purified water 40 ~ 50 parts by weight; manufacturing cheese stock 2 by heating and adding cheese flavor and cheese blocks; manufacturing the cheese stock compositions by cooling the cheese broth 2; preparing food materials of pumpkin, carrot, onion, and potato; and heating the rice with the food materials and the cheese stock compositions.
