<p><P>PROBLEM TO BE SOLVED: To provide a sparkling alcoholic beverage having favorable properties while avoiding problems characteristic of hop and a method for producing the same. <P>SOLUTION: The method for producing the sparkling alcoholic beverage includes a pre-fermentation step (S1) of using hop as a part of raw material so as to have a bitterness value (BU) of the sparkling alcoholic beverage of≤8 or not using hop and using a nitrogen source and a carbon source to prepare a pre-fermentation liquid, and a fermentation step (S2) of adding yeast to the pre-fermentation liquid and performing alcohol fermentation. <P>COPYRIGHT: (C)2010,JPO&INPIT</p> |
