PURPOSE: Seasonings using fish sauce and a manufacturing method thereof are provided to replace natural seasoning materials and synthetic savory materials such as MSG, IMP, and GMP etc with the fish sauce seasonings. CONSTITUTION: A manufacturing method of seasoning using fish sauce includes the following steps: deodorizing and decoloring liquid pickled sea food; extracting salt contained in the pickled sea food after concentrating salted sea food; separating the salt and the liquid picked sea food concentrate; repeating each step 5 ~ 6 times. An extraction step is performed at a temperature of 50 ~ 60°C. A separation step is performed with a centrifugal, an electrolysis or a continuous desalinating concentration method. |
