摘要 PURPOSE: A method for preserving shark(Dombaeki) improved flavor is provided improve flavor of dombaeki, and to restrict a specific smell of the dombaeck by using a flavor enhancer for preserving shark meat. CONSTITUTION: A method for preserving shark(Dombaeki) improved flavor includes the following steps: thawing frozen Isurus oxyrinchus; washing the thawed Isurus oxyrinchus in water; aging and salting the washed Isurus oxyrinchus with salt liquid including extract or a flavor enhancer for preserving shark meat; steaming the aged Isurus oxyrinchus in a steam cooker; spraying the flavor enhancer on the surface of Isurus oxyrinchus. The flavor enhancer is mixed extract of powder green tea, eggplants and mulberry leaves.
