The method involves connecting an intermediate section (142) of a transport pipe (24) to a lower section (140) or an upper section (144) of the pipe via a rapid disconnection body (164), and disconnecting of the rapid disconnection body. An intermediate structure (20) of a fluid transfer assembly (10) is placed in a driving configuration during the connection process and is moved towards a retaining configuration during the disconnection process. The intermediate structure is assembled between a barge (18) and a turret (16) and is moved between the driving and retaining configurations. An independent claim is also included for a fluid transfer assembly for transferring fluid between bottom of a water medium and a surface installation.
