<P>PROBLEM TO BE SOLVED: To provide an inexpensive, daily ingestible food or drink having the imparted functions of a lactic acid bacterium from plum fruits as a raw material. <P>SOLUTION: The plum fruit food or drink is obtained by fermenting plum fruits with a lactic acid bacterium belonging to Lactobacillus sp. FPL2 (NITE AP-692) which is high in gastric acid resistance, good in growth at low pH, high in bile resistance, and good in growth in plum fruits or plum juice, gives excellent flavor and palatability, after fermentation, and does not deteriorate the functions of the plum fruits such as oxidation resistance. <P>COPYRIGHT: (C)2010,JPO&INPIT |
