摘要 Disclosed is a method for producing a flavor composition utilizing a thermal reaction between methionine and a sugar, wherein methional can be contained in the flavor composition at a higher concentration.  Also disclosed is food or the like containing the composition produced by the method. In one embodiment, methionine and a sugar are mixed together, and the resulting mixture is heated for a specific time at a specific temperature at two different pH conditions.  In another embodiment, when methionine and a sugar are mixed together and heated, at least one of sodium chloride, potassium chloride, calcium chloride or a phosphate is contained therein, and the resulting mixture is heated for a specific time at a specific temperature at a specific pH condition.
