PURPOSE: A method of producing an instant flat pancake is provided to manufacture a tasty instant flat pancake conveniently anytime and anywhere, and to easily and simply bake the instant fan flat pancake. CONSTITUTION: A method of producing an instant flat pancake comprises the following steps: preparing an upper dough plate(111b) and a lower dough plate(111a) by making a dough plate by extruding or pushing dough(111); preparing fillings(113) including sugar; putting the fillings between the dough plates; separating a raw flat pancake(110); wrapping and packing the raw flat pancake in a packaging bag(130); freezing the sealed and packed raw flat pancake; and coating the raw pancake with cooking oil.
