PROBLEM TO BE SOLVED: To provide a fixing device which suppresses the occurrence of paper crease without stopping a printing operation, to provide a method for controlling press contact force of the same, and to provide an image forming apparatus. SOLUTION: The fixing device includes: a pressing member which presses one of a pair of fixing rollers to the other in both ends in a breadthwise direction; a bend amount detection member which detects an amount of bend in a position above the pair of fixing members, of a sheet held between a pair of fixing members and transported, in a center part and at least one end in the breadthwise direction of the sheet; a pressing adjustment member which adjusts a press contact force of the pressing member; and a control part which causes the pressing adjustment member to adjust the press contact force of the pressing member on the basis of the detection results of the bend amount detection member. When the amount of bend in the center part is larger than that in the end (S2:N), the press contact force of the pressing member is reduced (R4).
