PURPOSE: Health supplementary food using sprout vegetables and a manufacturing method thereof are provided to improve preference of the health supplementary food by containing beneficial components of medicinal herbs. CONSTITUTION: A manufacturing method of health supplementary food includes the following steps: drying sprout, germinated brown rice, germinated barley and medicinal herbs; mixing the germinated brown rice 80 ~ 120 parts by weight, sprout barley 40 ~ 60 parts by weight, and the medicinal herbs 200 ~ 300 parts by weight; and manufacturing pulverized mixtures to a granule, a capsule or pills. In a mixing step, Salicornia herbacea powder manufactured by freeze-drying salicornia herbacea fermentation liquid is mixed in the sprouts. The medicinal herbs are onion, mulberry leaves, Artemisia capillaris Thumb, or Glycine max MERR.
