摘要 PURPOSE: A method of manufacturing glutinous barley bread using cactus fruit juice is provided to make the bread with a function of cactus fruit such as cancer development suppression, and anti-aging etc by kneading flour with the cactus fruit juice, sugar, milk and live yeast etc. CONSTITUTION: A method of manufacturing glutinous barley bread using cactus fruit juice comprises the following steps: producing extract of cactus fruit after removing impurities of the cactus fruit; cooling the cactus fruit juice; drying the washed glutinous barley; powdering the dried glutinous barley; freezing the glutinous barley powder; forming a first mixture by mixing the glutinous barley powder, the cactus fruit juice, wheat flour, sugar, milk, butter, live yeast, and salt etc; forming a dough by kneading the first mixture; making filling for the dough; fermenting the dough filled with filling; and baking the fermented dough.
