PURPOSE: A makkoli manufacturing method using Ipomoea batatas is provided to enjoy savory flavor of Ipomoea batatas and ensure various nutritions and efficiencies. CONSTITUTION: A manufacturing method of makkoli using Ipomoea batatas comprises: a step of washing root tuber of Ipomoea batatas and eliminating foreign material(S-1a); a step of pulverizing(S-2a); a step of steaming the pulverized root tuber of Ipomoea batatas(S-3a); a step of adding malt and fermenting(S-4a); a step of adding water and yeast and stirring; a step of adding lactic acid and maturing to form distiller's grains(S-5a); and a step of adding water, and purifying enzyme and fermenting(S-6a). |
