The invention relates to the yeast strainIMB Y-5030 and can be used for alcohol fermentation of mash at production of white table wines. The yeast strain actively ferments mash at low and high temperatures, forms firm deposit, has resistance to increased doses of sulfur dioxide and increased aroma-forming capacity.
