<p>The process comprises primarily unloading (E1) the milk in a manufacturing tank, introducing and then maturing (E2) ferments in the tank, monitoring (E3) the change of the pH in the manufacturing tank, secondarily unloading the milk in the manufacture tank according to the maturation of ferments, setting (E4), hardening (E5) and coagulating the resultant ferments, cutting of the obtained product into curd, extracting the serum, and molding into raw milk cheese. Independent claims are included for: (1) a process for monitoring the manufacturing process of a raw milk cheese; (2) a computer program for monitoring the cheese manufacturing process; and (3) a recording medium readable by a computer.</p> |
