<P>PROBLEM TO BE SOLVED: To provide a crystalline cellulose complex compound as a milk beverage stabilizer, which is added to a milk component-containing beverage to produce a beverage remarkably suppressed in generation of oil ring, oil off, coagulation, precipitation, or the like, even if the milk component-containing beverage is a beverage such as milk coffee or milk tea containing a large amount of a milk component. <P>SOLUTION: The crystalline cellulose complex compound contains crystalline cellulose, alginic acid ester, and an emulsifier. Specifically, the crystalline cellulose complex compound contains 50-95 mass% of the crystalline cellulose, 1-25 mass% of the alginic acid ester, and 1-25 mass% of the emulsifier. <P>COPYRIGHT: (C)2010,JPO&INPIT |
