The present invention relates to the development of a method for obtainment from amaranth grain of albumin 1 and globulin hydrolysate fractions containing peptides having antihypertensive activity as evaluated by the IC50 value thereof. Different fractions may be obtained from the hydrolysate depending on the degree of purity required. The process may be stopped at any stage of the procedure ensuring that it contains antihypertensive peptides. Nevertheless it is preferable to obtain 0.55 kDa peptide fractions for albumin 1 and 0.4 kDa for globulin. The process is simple and solely involves extraction of the proteins from amaranth grain utilising 0.04 M sodium sulphate solution, and subsequent separation of albumin 1 and globulin through the difference in solubility thereof in water. Hydrolysis of these proteins is realised by alcalase for 15 or 18 h for albumin 1 and globulin, respectively. The hydrolysate obtained may be used from this moment onwards or, if preferred, the hydrolysat e fractions containing antihypertensive peptides may be purified to the desired degree of purity, ensuring that the fraction conserves antihypertensive activity evaluated in terms of the IC50 value thereof.
