PURPOSE: A method for manufacturing the black bean doenjang, and the black bean doenjang prepared by the method are provided to improve the anti-obesity effect. CONSTITUTION: A method for manufacturing the black bean doenjang comprises the steps of dipping the washed black bean in water for 10~15 hours; steaming the black bean for 0.5~2 hours; adding 0.5~2 wt% of the fermentation strain to the steamed black bean and fermenting it at 25~40°C for 36~60 hours; drying the fermented black bean at 35~50°C for 20~30 hours; and making meju from the dried black bean. |
