PURPOSE: A manufacturing method of chocolate containing opuntia humifusa is offered to obtain effects of opuntia humifusa and sweetness of the chocolate conveniently through intake of the chocolate using opuntia humifusa as a material of the chocolate. CONSTITUTION: A manufacturing method of chocolate containing opuntia humifusa comprises the following steps: drying and washing collected opuntia humifusa in -10 ~ -20°C to fine powde(S10)r; freeze-drying the fine powder; manufacturing concentrate using ethanol as a solvent; removing the solvent in the concentrate to make powder sample; mixing a mixture of sugar 30 ~ 40 parts by weight, milk 10-25 parts by weight, skimmed milk powder 10-29 parts by weight, cocoa butter 1-3 parts by weight, and cocoa mass l5-25 parts by weight with cocoa butter or replacement milk 20-30 parts by weight; manufacturing base chocolate by melting other ingredients in 40-60°C; agitating powder sample and the base chocolate; molding a mixture; and cooling the mixture(S70). |
