摘要 <P>PROBLEM TO BE SOLVED: To provide a galacturonic acid-assimilating yeast which assimilates galacturonic acid that is a degraded product of polygalacturonic acid and contributes recycling of pectin. Ž<P>SOLUTION: There is provided yeast capable of producing a NADPH-specific galacturonic acid reductase derived from a low temperature-adapted yeast (Deposit No. NITE P-611; Deposit Date: July 18, 2008) isolated from Cocha of a local sake, Ou, in Thailand, and having following characteristics: (1) it is stable in an environment of 20 to 45°C and 6.0 to 8.4 in pH; (2) its optimum temperature is around 40°C and its optimum pH is around 6.3; (3) it reacts with galacturonic acid and glucuronic acid but does not react with galactose, glucose, mannose, sorbitol and gluconic acid; and (4) it is inhibited by each 1mM of Cu<SP>2+</SP>, Fe<SP>2+</SP>and Pb<SP>2+</SP>, and is not inhibited by each 1mM of Mg<SP>2+</SP>, Co<SP>2+</SP>, Mn<SP>2+</SP>, Na<SP>+</SP>, Ca<SP>2+</SP>, Ni<SP>2+</SP>, K<SP>+</SP>, Ba<SP>2+</SP>and Zn<SP>2+</SP>.
