PROBLEM TO BE SOLVED: To provide a dried fish extract and a dried fish extract-containing seasoning which each has a reinforced dried fish flavor and a reduced characteristic undesirable dried fish flavor.

SOLUTION: The method for improving the flavor of the dried fish extract or dried fish extract-containing seasoning includes adding β-damascenone or β-damascenone and cedrol to the dried fish extract or dried fish extract-containing seasoning, and a dried fish flavor-improving agent for the dried fish extract or dried fish extract-containing seasoning contains β-damascenone or β-damascenone and cedrol.
