PROBLEM TO BE SOLVED: To provide electrophotographic toner which is excellent in electrification, hardly causes fogging and is excellent in image characteristics, while maintaining a wide fixing temperature width; and to provide a method of manufacturing the electrophotographic toner. SOLUTION: The method of manufacturing electrophotographic toner comprises: a step (1) of dispersing resin that includes polyester into an aqueous medium to obtain resin particles; a step (2) of aggregating the resin particles obtained in the step (1) to obtain aggregated particles; and a step (3) of coalescing the aggregated particles obtained in the step (2) to obtain coalesced particles, wherein, during a period after the completion of the step (1) and the completion of the step (3), a step (A) of adding a copolymer which has glycidyl group and N-hydroxyalkylamido group and has a logP value in the range of -3 to -0.4 is included.
