<P>PROBLEM TO BE SOLVED: To provide a puffed rice food product with new taste, especially a product as dried scorched rice or a topping raw material, produceable in a short time in a simple production process, and easily moldable and processable in an arbitrary shape, and to provide a method for producing the puffed rice food product. <P>SOLUTION: The method for producing the puffed rice food product includes using dried gelatinized rice of rice grains as the raw material rice, omitting either or all of a boiling step, a fermenting step, and a drying step, and performing a step of frying in oil. As a result of this, a production step of the puffed rice food product is simplified to enable easy molding and processing in an arbitrary shape in large quantities at a low cost in a short time of within 30 min. The puffed rice food product thus obtained has flavor of rice, rice grain feeling, and crispy feeling because the texture and shape of rice are well puffed in a short time without breaking. <P>COPYRIGHT: (C)2010,JPO&INPIT |
