<P>PROBLEM TO BE SOLVED: To provide a method for efficiently producing a single-celled vegetable food raw material such as leaf vegetables, fruits, or the like having soft plant tissues, whose color and/or flavor is satisfactorily maintained for a long time even under such a severe condition as to be exposed in heat and/or light. <P>SOLUTION: The method for producing a single-celled vegetable food raw material includes: immersing a fresh vegetable food raw material in enzymatic solution without freezing/thawing or blanching; and repeating the steps for leaving the material under normal pressure after being pressurized at a suction pressure of 1-7.5 kPa at least twice. A food product is prepared by using the single-celled vegetable food raw material obtained by the method for producing a single-celled vegetable food raw material. <P>COPYRIGHT: (C)2010,JPO&INPIT |
