<P>PROBLEM TO BE SOLVED: To provide a cereal flour composition for bread, containing rice flour and, nevertheless, giving bread having volume and eating quality similar to those of bread produced exclusively from wheat flour, having excellent texture such as glutinousness and moistness characteristic to rice flour and resistant to aging. Ž<P>SOLUTION: The cereal flour composition for bread contains 70-95 pts.mass of wheat flour and 5-30 pts.mass of rice flour having characteristics (i) and (ii). (i) The wheat flour is produced from a hard wheat, has a particle size distribution having a maximum frequency in a particle diameter range of 50-90 μm and contains 75% or more of particles having particle diameter of 26-105 μm; and (ii) the rice flour is produced from a nonglutinous rice, has a particle size distribution having a maximum frequency in a particle diameter range of 50-90 μm and contains 50% or more of particles having particle diameter of 26-105 μm and 15% or less of particles having particle diameter of not less than 125 μm.
