<P>PROBLEM TO BE SOLVED: To provide an emulsified composition for beverages which is capable of stably dispersing and holding a fat-soluble ingredient in the beverages at a high concentration, and further imparting moderate turbidity. <P>SOLUTION: The emulsified composition for the beverages contains 8-18 wt.% of the fat-soluble ingredient, and gum ghatti gum and/or a modified gum arabic without containing a synthetic weighting agent. The average emulsified particle diameter of the emulsified particles of the fat-soluble ingredient obtained by dispersing or emulsifying thereof in a solution is not less than 0.3 and not more than 0.7 μm, and the absorbance (measured at a measurement wavelength of 720 nm and a cell width of 1 cm) is not less than 0.05 using water as control when diluted in the water at a concentration of 0.1%. <P>COPYRIGHT: (C)2010,JPO&INPIT |
