PURPOSE: A manufacturing method of environmentally friendly semi-dried persimmon and the environmentally friendly semi-dried persimmon manufactured thereby are provided to prevent browning and decolorattio of the persimmon through rapid-freezing, low temperature freezing, aging, and drying. CONSTITUTION: A manufacturing method of environmentally friendly semi-dried persimmon comprises the following steps: peeling persimmon; dividing the persimmon to 2 ~ 5 pieces; rapidly freezing the peeled persimmon in -30 ~ -40°C for 1 ~ 3 hours; aging the frozen persimmon in 5~15°C for 72 ~ 80 hours; aging the persimmon for 2 ~ 5 days; and drying the aged persimmon in 30~40°C for 60~100 hours.
