<p><P>PROBLEM TO BE SOLVED: To provide a method for producing a sparkling liquor that has a beer taste and a refreshing and clear taste and a sparkling liquor produced by the method. <P>SOLUTION: In the method for producing a sparkling liquor having a malt use content in a brewing raw material of less than 50%, the sparkling liquor is produced by adding a concentrated red wine essence that is obtained by concentrating a red wine by reduced-pressure distillation and has an adjusted total amino acid and total polyphenol concentration and/or resveratrol concentration to a solution before fermentation. The sparkling liquor having a fine taste balance essential to a beer, a natural refreshing feeling and clear taste of beer is produced by the method of production. <P>COPYRIGHT: (C)2010,JPO&INPIT</p> |
