<P>PROBLEM TO BE SOLVED: To provide a method for producing oil-and-fat having the high content of a cis-monounsaturated fatty acid group such as an oleate group and the low content of a trans acid group. <P>SOLUTION: The method for producing oil-and-fat enhanced in the high content of a cis-monounsaturated fatty acid group is to hydrogenate a raw material oil-and-fat containing a polyunsaturated fatty acid group by using a hydrogenation catalyst containing at least one of element selected from the elements in Group 11 of the periodic table. <P>COPYRIGHT: (C)2010,JPO&INPIT |
