A fatty acid of the formula HRCOOH or its nitrile, esters with C1-5 alcohols or glyceride are nitrated to the corresponding acid O2NRCOOH or derivative thereof (where R is a saturated bivalent aliphatic hydrocarbon radical having 11-17 carbon atoms) by contact in the liquid phase at 150-190 DEG C. with a nitrating agent which consists of an oxide of nitrogen having a N:O ratio of 1:2, e.g. N2O4 or NO2. Examples nitrate lauric acid, methyl laurate, lauronitrile and hydrogenated cottonseed oil (mainly tristearin).
