The present invention refers to the obtention of coffee with null or reduced acidity, as well as methods and apparatus for obtaining the same. The aforementioned method allows the coffee acidity to be reduced down to 75% or completely removed, thereby being used for obtaining beverages or products derived therefrom for human consumption, without contributing to the digestive tract acidity, said product resulting from a coffee-grain toasting method using a modified toasting chamber located in a conventional machine for toasting coffee grains. The coffee of the present invention may be safely consumed by people with gastric acidity disorders, generating a sensation of relief and pleasure, since it does not cause discomfort or side effects resulting from the consumption of highly acid toasted coffees..
