VEGETARIAN TYPE YEAST EXTRACT WITH MEAT FLAVOR, PROCESSING METHOD AND USE THEREOF
摘要
Vegetarian type yeast extract with meat flavor, processing method and use thereof, the method includes following steps: (1) adding yeast extract and adjuvant materials into a reactor and blending; and (2) allowing the mixture obtained in step (1) reacting under pH5.0-7.0 and 105-135? for 15-60 minutes in the reactor. The extract obtained by the method can be used in vegetarian foods.
