FIELD: food industry. ^ SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for extraction of coriander by liquid nitrogen with corresponding miscella separation, cutting, drying in microwave field at preset process parametres and frying girasol/sunflower, cutting and drying apples in microwave field at preset process parametres and drying them by convective method, mixing of girasol/sunflower and apples, impregnation of obtained mixture by separated miscella with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen. ^ EFFECT: method allows to produce new flavoured coffee drink according to nonwaste technology. |
