The invention relates to Gram-negative bacteria biocide obtainable by extraction of the outer section of the root of Apiaceae vegetables, and especially from the (i) pericyclic parenchyma, and (H) the phloem part, close to the secondary cambium, of carrot taproots. The inventione further relates to Natural food preservatives comprising the extract and methods producing the same.
