<P>PROBLEM TO BE SOLVED: To provide a mineral-fortified protein composition having improved suspension characteristics. <P>SOLUTION: There is provided a process for producing a mineral fortified protein composition for use in the production of foodstuffs, comprising; combining an aqueous slurry of a vegetable protein material and a hydrated gel of an alkaline earth metal phosphate salt to form an alkaline earth metal fortified vegetable protein composition, wherein, the alkaline earth metal content of the alkaline earth metal fortified vegetable protein composition is 3-12 mass% based on the dry mass, and the hydrated gel of the alkaline earth metal phosphate salt forms an aqueous slurry of the alkaline earth metal hydroxide, and wherein the alkaline earth metal hydroxide forms 2-10 mass% of the slurry; adding phosphoric acid to the slurry of the alkaline earth metal hydroxide within from 30 s to 5 min; and mixing the slurry of the alkaline earth metal hydroxide and phosphoric acid and either homogenizing at 500-2,000 psi or sonicating at 1,000-1,500 psi to form the hydrated gel of the alkaline earth metal phosphate salt, wherein the hydrated gel of the alkaline earth metal phosphate salt has at least 3.0-14 mass% solid. <P>COPYRIGHT: (C)2010,JPO&INPIT |
