FIELD: food industry. ^ SUBSTANCE: according to the proposed method juice is being deaerated and treated by electromagnetic field. Electromagnetic field is generated by electric signal in the form of alternate electric current and unipolar electric impulses in frequency range of 100-500 Hz with amplitude of magnetic induction from 0.2 till 0.45 Tl and specific power from 0.01 till 0.1 kWt/l. Deaeration is being carried out in low-pressure chamber during 5-15 seconds. The device consists of tank for raw product which is connected to pipeline, device for processing of pipeline part with a product, electromagnetic field, electromagnetic field power and frequency regulation device, overpressure system which consists of nitrogen container and nitrogen feeding faucet, vacuum creation system and packing system of treated product, connected to the container for raw product, as a low-pressure chamber. Device for processing of the product consists of at least one electromagnet coil connected to the electromagnetic field generator which functions within the limit of 100-500 Hz. ^ EFFECT: proposed group of inventions allows to decrease juice sedimentation and to increase storage life. ^ 10 cl, 2 dwg, 1 tbl |
