<P>PROBLEM TO BE SOLVED: To provide a softening method by which vegetable raw material can be reliably softened while maintaining its shape and syneresis from the vegetable raw material (food) is suppressed, and to provide softened vegetable food which is softened and suppressed in syneresis by the softening method while maintaining its shape, and excellent in palate feeling. <P>SOLUTION: The softening method for softening vegetable raw material includes heating the vegetable raw material under the saturated vapor pressure followed by adding an enzyme to the raw material to subject the vegetable raw material to enzymatic treatment with 10-50 wt.% of enzyme treatment liquid based on the weight of the vegetable raw material before the heating treatment.
