PURPOSE: A method of manufacturing Koji pellets and Koji products using an extruder is provided to produce the products of high quality, and to remarkably reduce manufacturing costs while increasing a using rate of raw materials of the Koji products. CONSTITUTION: A method of manufacturing Koji pellets and Koji products using an extruder comprises the following steps: preparing protein materials and starch materials; uniformly mixing the protein materials and the starch materials after pre-treatment; making the protein materials to a pellet with the extruder; and manufacturing Koji after producing the pellets. The protein materials and the starch materials are soybean milk, grains or a mixture of the soybean milk and the grains.
