<P>PROBLEM TO BE SOLVED: To provide Undaria pinnatifida powder which has reduced unpleasant smell of sea weed and is excellent in the stability of aroma and color on storage, and to provide a method for producing the same. <P>SOLUTION: There is provided the Undaria pinnatifida powder characterized by comprising Undaria pinnatifida, an alkali metal salt, and Sake lees. There is also provided the method for producing the Undaria pinnatifida powder, characterized by comprising a process of contacting Undaria pinnatifida with an alkali metal salt and Sake lees to obtain a sol-like aqueous solution, a process of drying the obtained sol-like aqueous solution to obtain the dried Undaria pinnatifida, and a process of pulverizing the resultant dried Undaria pinnatifida. <P>COPYRIGHT: (C)2010,JPO&INPIT |
