<P>PROBLEM TO BE SOLVED: To provide a food preserving material produced from cereals through fermentation. <P>SOLUTION: Fermented unrefined Sake is produced from cereals by using cereals as the raw material, and using lactic acid bacterium which has high osmotic pressure resistance and high sodium chloride resistance, and yeast which has both high sodium chloride resistance and high ethyl alcohol resistance. The fermented unrefined Sake has pH 2.5-5.0, an ethyl alcohol concentration of 4-25%, and a salt concentration of 3-20%. <P>COPYRIGHT: (C)2010,JPO&INPIT |
