<p>The group of inventions relates to wort production in the brewing of beer or in the production of alcohol or kvass. The wort production method, which comprises processes for producing, saccharifying and filtering a mash to produce an initial wort, involves placing raw material for mashing in at least one water-permeable container in the form of a bag and carrying out the processes for producing, saccharifying and filtering the mash to produce an initial wort in a movable container into which the water-permeable bags containing the raw material for mashing are first placed. The method is carried out with the aid of a wort production apparatus comprising a body that is provided with heating/cooling means and that houses a movable container which is provided with means for separating and removing the wort and into which one or more water-permeable bags containing the raw material for mashing are placed. The movable container may be in the form of a perforated drum which is mounted in such a way that it can rotate. The implementation of the group of inventions makes it possible to substantially decrease the cost and the overall dimensions of the brewing unit, substantially reduce the length of the beer wort production cycle from 5-8 hours to 3-5 hours, provide a brewing unit capacity of between 8 and 14 brews per day depending on the length of the combined mashing and filtering process, reduce the brewing unit energy consumption and reduce the residual wort content in the spent grain.</p> |
